In the kitchen at Marius, we celebrate Provence, purple artichokes à la Barigoule, octopus stew, fresh local langoustine, filet of Piedmont beef, sun-dried tomato sauce, frozen lemon dessert with basil.  Sébastien’s dream is simple.  Benefitting from more than two decades of experience with Provencal cuisine, the chef wants Marius to showcase Provence at its richest, simplest and most generous. In addition, Sébastien is a bon vivant who loves big convivial “family-style” feasts where everyone shares a multitude of dishes and flavors of the South of France.

Marius is, above all, an engaging story of collaboration, the meeting between three men Didier Rubiolo , founding president of the former Stars’n’Bars , Marc Dussoullier , managing director and Sébastien Sanjou , Michelin-starred chef.  Marius is a new opportunity for Monaco to discover a simple, authentic and sustainable approach to food: tasty, generous and accessible, with the freshest, highest quality ingredients from local producers.In addition to being one of writer and former resident of Monaco Marcel Pagnol’s literary heroes, Marius comes from the Latin “mare” for “sea”.  Marius is in essence an ode to the Mediterranean Sea and to its Provencal traditions.

The bar

Nestled under the arcades of Port Hercule, Marius has a simple decor of wood, terracotta and marble. A central bar at its heart invites guests to enjoy sharing plates and cocktails flavored with  local herbs as well as homemade kombucha
